Cacciatore (Mother)

Cacciatore: a classic Italian dish which usually takes hours to cook, no really, it means Hunter (style). Though it does take Cacciatore hours with bone-in chicken or rabbit, we’ve refined it to have on the table in 30 minutes.

Tender chunks of chicken with crisp fresh vegetables to tantalize your taste buds. Like some other chicken recipes you’ve seen here, you can substitute some precooked chicken for the raw bird. Your family will think you spent the afternoon in the kitchen, but we know better, don’t we?

This recipe leaves you plenty of time to put together a gorgeous salad and toast up some cheesy garlic bread. Leave some room to enjoy these quick to fix individual Berry Clafoutis’ for dessert, comfort food at its finest, Mangia!

Cacciatore

2 chicken breasts cut into one inch pieces*

A red pepper and a sweet onion, rough chop

6 mushrooms, halved

A tsp dried rosemary

1 Tbsp olive oil

Bulletproof Mother

*If you don’t like handling raw chicken, substitute precooked chicken and reduce the cooking time to ten minutes!

Heat a large sauté pan over medium high heat, when hot add the oil, onions and give them a stir to coat. Add the chicken and cook for two minute per side. Now add the peppers, mushrooms, rosemary and cook for two minutes. Pour in the Mother Sauce and reduce heat to simmer for 15 minutes.

Serve with pasta of choice and steamed broccoli of wilted spinach.
