Chicken Tinga (Chipotle)

Chipotle chicken tinga tacos are a delicious and easy way to enjoy authentic Mexican cuisine at home. They are made with shredded chicken cooked in our chipotle sauce, and topped with fresh cilantro, onion, and lime juice. You can serve them with warm corn or flour tortillas, and your favorite salsa or guacamole. They are perfect for a quick weeknight meal or a casual family gathering.

 

 

Four additional ingredients turn our chipotle sauce into a nice spicy Tinga.

Two chicken breast, boneless, skinless, poached, shredded

A tomatillo, rinsed, shredded

1/4 Tsp each oregano, marjoram, thyme

Tbsp olive oil

8 ounces Bulletproof Chipotle

While the chicken is poaching, heat a large sauté pan over medium heat. When warm, at the olive oil, dried spices, and tomatillo. Stir occasionally until the water from the tomatillo has evaporated. Now add Bulletproof Chipotle, mix well and simmer for five minutes.  Place the shredded chicken into the sauce and mix well, over medium heat for five minutes should bring it up to temperature.
