Mexican Street Corn Salad (TexMex)

If you like Mexican Street Corn, you’re gonna flip for this recipe! Creamy, crunch, spicy, and sweet, an explosion of flavor to accompany any meal.

2C corn

1/3 C mayonnaise

1/4 C Parmesan or Cotija cheese

1 jalapeño, seeded, small dice or a tin of green chiles

One scallion, thinly sliced

Tbs cilantro

Tbs lime juice

Tsp TexMex rub .

Combine the wet ingredients with the TexMex rub and mix vigorously. Add remaining ingredients, serve or refrigerate for an hour or the longer the better as the spices will hydrate and give more flavor.
