Whether you’re cooking for the family or taking a dish to a potluck dinner, Shredded Beef (or pork) is a crowd pleaser. It can be served over pasta, grains, or made into grinders or sliders. It involves a minimal amount of prep then its hands-free cooking!
2 – 2 1/2 pounds stewing beef
1 large, sweet onion, cut into eighths.
1 Tbsp olive oil
Salt and pepper
1 Cup stock or water
1 Jar Bulletproof Balsamic Basil
Preheat your oven to 350°. Heat an oven safe sauté pan over medium high heat until hot. Pat dry your beef cubes and sprinkle liberally with salt and pepper. Now your pan is hot, add olive oil and swirl around the pan to coat, add beef cubes (do not crowd the pan, cook in batches if necessary). Turn the cubes after 2 minutes and add onions, if you cooked in batches add onions after the final batch when returning previously seared beef to the pan. Add the cup of hot stock and pour the Balsamic Basil over the beef, do not stir! Cover and place in the oven for 2-2 ½ hours, it should be tender enough to shred with two forks. If you like you can add more sliced onions, peppers and mushrooms during the last 45 minutes of cooking to amp up the dish.
