Tamale Pie, or sometimes called Mexican lasagna, is a tasty casserole style dish which is high in protein and low in fat. The dish comes together quickly, pop it in the oven, and the aroma fill the kitchen!
1 pound ground beef
1 9 oz tube chorizo
1 can black beans
1 can corn or hominy
A roasted poblano, diced
10 oz Oaxaca cheese, grated
12 corn tortillas, 9 halved, 3 whole
One jar Bulletproof Chipotle
Preheat oven to 350°.
Cook beef and chorizo in a sauté pan over medium high heat, drain in a mesh strainer to remove excess oil. Mix one cup chipotle sauce with meat mixture.
Pour 1/2 cup chipotle sauce in the bottom of casserole. Line the bottom of the casserole dish with tortillas, straight edges against sides and a whole one in the center. Pour beef and chorizo mixture on top of tortillas and cover with another layer of tortilla shells as before with cut edges against the side. Add black beans, corn, poblano, and 2/3 of the Oaxaca cheese and cover with final layer of tortillas. Spread remaining chipotle sauce across the last layer and sprinkle with remaining cheese. Bake for 35-45 minutes (155° internal temperature), let rest 10 minutes before serving.
Garnish with avocado, pickled onions, and sour cream.
