Serve over pasta with crusty bread and a crisp green salad. If you’re skittish about using fresh seafood you can certainly use frozen or precooked. Just remember to thaw before cooking, the safe internal temperature for seafood is 145 degrees and 165 degrees for leftovers but it’s my opinion you won’t have any!

1# mixed seafood
1 small, sweet onion, halved and thinly sliced
1 Tsp dry oregano
1/2 Tsp red pepper flakes
1 Tbsp olive oil
Pasta of choice
This recipe comes together quickly, start it after you’ve dropped your pasta in the water!
Warm a large saute pan over medium high heat, add olive oil and onion, cook for a couple of minutes. Reduce heat to medium, add oregano and red pepper flakes, and simmer for 10 minutes. Now you can add the seafood and cook through, approximately 5 minutes for medium size shrimp, scallops, or mussels.
