Nada dice comida reconfortante como el pastel de carne… Sorry, I drifted to the last time I made my Chipotle Turkey Meatloaf. Nothing says comfort like meatloaf, it’s time to spice things up at the dinner table! Fire up the oven and with a little slicing and dicing and mixing you’ll have this put together before the oven preheats! This flavorful remix of the American classic brings all the warm feels of earthy, smoky southwestern flavor we are all accustomed to. A lighter, leaner, healthier version using turkey instead of beef is a welcome change as well. Nobody’s saying you can’t have creamy mashed potatoes, but I’d be over the moon if you tried my Jeera Rice or Bombay Potatoes with this Chipotle Turkey Meatloaf!
2# Ground Turkey, lean
1 Cup Panko breadcrumbs
1 Large egg
3 Green onions, finely sliced
1/2 Tsp each salt and black pepper
1 Can Green chiles, drained, found in the Latino section of your market
1/2 Jar Bulletproof Chipotle Sauces
Preheat oven to 400°. While the oven warms combine all ingredients, except chipotle sauce, in a large mixing bowl and mix well until all ingredients are well distributed. Firmly pack the mixture in to a loaf pan and cook for about 30 minutes. Drain any liquids from the pan and cover the top of the meatloaf with chipotle pepper sauce. Return to the oven and cook an additional 15 minutes. Internal temperature should read 165°. Let the loaf rest for 10 minutes before slicing.
